CrockPot Thai Curry Recipe

Thai Curry in the Slow Cooker -- this is the recipe that Rachael Ray gave me! It tastes just like it came from a delivery guy. ;-)

Okay. So remember when I WAS ON THE RACHAEL RAY SHOW LAST WEEK?!?!?!?!



When I filmed the segment, Rachael gave me two curry recipes. She had heard through the producers about my sad attempt at making a coconut curry recipe, so gave me two recipes that her kitchen staff perfected for the Crock-Pot--one Thai, and one Indian.

I finally (it was so hard to wait!) made the Thai version yesterday. I'm going to make the Indian version today, and will post that recipe tomorrow.


The Ingredients.



  • 1 (13.5-ounce) can coconut milk
  • 1 tablespoon brown sugar
  • 1 tablespoon soy sauce (La Choy is gluten free, and so is Tamari wheat-free)
  • 1 tablespoon Thai red or green chili paste, or more to taste (I used red, and went with 1.5 T)
  • 1 teaspoon fish sauce (optional. I put it in because I was thrilled to have another use for fish sauce!)
  • 1 yellow onion, chopped
  • 2-3 cloves garlic, chopped
  • 1 red bell pepper, seeded and chopped
  • 1 green bell pepper, seeded and chopped
  • 1/2 large eggplant, peeled and chopped
  • 1 sweet potato, peeled and chopped
  • chicken thighs (I used 5 frozen boneless, skinless)
  • And! 1-inch knob of ginger, peeled and grated. I bought this. I totally forgot to use it. It's probably for the best, since we aren't huge ginger people.


The Directions.

Combine the sauce ingredients: coconut milk, soy sauce, brown sugar, chili paste, and fish sauce in the bottom of your crockpot stoneware.

Taste. If you think you need more chili paste, add some, carefully. It's hot stuff!

Add the chicken pieces to the sauce, flipping them over a few times so they get nice and saucy.

Wash and cut the vegetables, and add to the crock. (PS. There's a lot of peeling and chopping here. I highly recommend you doing this the night before so you aren't standing in the kitchen swearing in your bathrobe at 6am. Trust me on this one.)

Cover and cook on low for 6-8 hours, or on high for 4-6. This is done when the chicken is fully cooked and the vegetables have reached desired tenderness.

I cooked ours on high for 5 hours. The vegetables were soft, but not squishy, and the chicken was cooked, but still had shape.

Serve over white rice.


The Verdict.

This is good, very good! 

Rachael and her staff know what they are doing! 

The prep time was more than I'm used to, and although it looks like a bunch of ingredients, it came together easily. 

If you are assembling the night before, put the chicken in the sauce to marinate, but keep the vegetables separate until the morning when you plug in the crock.

This dish is full of flavor that is so on-the-money. 

It was not too spicy, and the kids ate a good amount--mostly the chicken. 

And one of them dipped it in bbq sauce, but whatever.

I'm excited to try out the Indian, and do a side-by-side comparison!

Ingredients

    Yum! This looks almost identical to the recipe I make. The only change I do is to whisk in 3 or 4 TB of flour when I add the coconut milk -- just gives it a thicker sauce when it is all done. Thanks for reminding me about this crockpot fav! :)

    I have my TIVO set!

    Question about using frozen chicken in the crockpot... don't you get that white goopy cooked blood in your food? That is my one real gripe with crockpot cooking.

    Brittany - If there is a Sam's Club in your area, they usually have boneless skinless thighs there. Maybe Costco?

  11. Brittany, that is so weird! Boneless, skinless thighs are a total staple in our grocery stores in CA. You can definitely use bone-in thighs, or use breast pieces. It's all good.

    Kathleen, oh, why did you have to bring up chicken blood?! gross. Now I'm going to have nightmares.
    to answer your question, NO. I've never noticed blood floating around the crock, and now I will definitely keep my eyes open for it.

  12. crabby, we cross-posted. No, chili paste is different. It doesn't have curry in it (actually this whole dish doesn't have curry in it, weird. that's the name...) it's more of a slimy red chili pepper sauce. I found it in the Asian aisle at our grocery store. I think you could substitute red chili flakes (start with 1 t).

    I'm almost ashamed to admit it, but I don't own a crock pot! I've been thinking of getting one. What can you recommend in terms of size? We're a family of 3 (soon to be 4), I'm vegetarian and the rest of them eat meat. I don't want something TOO BIG but I'd hate to go too small too. Thanks!

  55. 2 cans cream of mushroom soup
    2 tblspns of horshradish
    1/4 cup of milk
    2 cups of elbow noodles
    2 cups of ham diced
    2 cups of cheese
    2 tspns of red pepper

    boil noodles
    mix all and head until its bubbling on the sides about 30 min I guess

    I no this isn't the best for you or the most elaberate but it's so good and easy to make I end up making it once a month.

    Then to change it up every once in a while I substitute the meat with something else. If you use tuna add twice the milk. (It drys it out a little)

    I am very angry that we do not have local channels on our Dish and so can't watch the Rachael Ray show, just to see the crockpot lady in action.

    This is totally unrelated to the recipe above, but have you tried making rice pudding in the crockpot?

    This is the recipe I tried today:

    4 cups milk (i used soy milk)
    1/2 cup white rice
    1/2 cup sugar
    1/2 tsp vanilla
    1/8 tsp salt (optional)
    1/4-1/2 tsp cinnamon
    1 1/2 T butter or margarine (just plop it in there on top of everything once it's mixed)

    Cook on high for 30 minutes, then on Low until it's just about right (for my crockpot that took, eh, about two hours. Keep an eye on it and stir.). This will taste much better once it's cooled a bit. If you're feeling really fancy, toss some dried fruit in there, chopped fine.

    I cooked the pudding in a Corningware dish, because that's how I roll now that the Crockpot Lady clued me in that i could DO that. I never knew you could do that. Saves a lot of Crock-washing!

My oven actually died a few weeks ago, and we have yet to decide on a new one so i have been using the stovetop and grilling alot. I forgot I had a crockpot!!!   70. I was so excited to see you on TV this morning. I have made several of your recipes (have the orange chipotle ribs in the crock right now..the aroma is wonderful) and keep coming back for more. You were amazing and such a natural. I loved your outfit and your ease in front of the camera and a whole audience of people. You didn't look nervous at all. It is hard to pull off when you are new to the TV things and trying to talk, cook, and look good all at the same time...and you were sick. I bet it was nice to have your mom there to support you. You'll always have tons of support here in blogland but its not the same. Out of curiosity...have you used the new rival they gave you? Do you like it?

    Loved you on TV today! You did great!! Here's my all-time favorite and easy crockpot recipe -

    BEEF IN CROCKPOT RECIPE
    2-3 pounds of beef (any type of roast - whatever is on sale!)
    1 can of Amy's organic cream of mushroom soup
    Cook on low about 8 hours.

    That's it - I spray the pot first with cooking spray, then just put the meat in and then empty the soup can. Looks pretty gross though, so be prepared! The Amy's soup has already got lots of spices and onion and stuff in there, so no need to add any of your own :)

    Keep up the good work on the blog! I am determined to use my crockpot a whole lot more thanks to you!

    Hello! Enjoyed your Rachael Ray spotlight!! I was so excited because I found your blog early in January, and (yes I obsess) read it every day. I feel like I knew you BEFORE. :)
    I have made about 30 of your recipes. My fave is the Tomatoes with goat cheese and cranberries. (I have made them 6 times already!!) And the spicy pork burritos are expectional!
    My kids and I made crockpot crayons 3 days ago and are very happy with the results.

    I found out about your blog from a friend that watched the Rachael Ray show the day you were on.

    Thank you so much for sharing your passion for the crockpot! You have saved me a fortune, just this week, on takeout....we've had very high temps here where I live, and it was just too hot to cook. So I got out my trusty crockpots.....

  117. Hi, we're trying this today - very excited! Question, though - on the Rachel Ray site, she has some great-sounding garnishes for this recipe:

    1 lime, cut into wedges, to garnish
    2 scallions, thinly sliced, to garnish
    1/2 cup chopped cilantro, to garnish
    1/2 cup chopped basil, to garnish

    Just curious why you left this out? Wasn't sure if it was for time-saving reasons - i.e., defeats the purpose of the crockpot to go to more trouble later?

  118. Hi -- been lurking for quite awhile and now I have a question. On this recipe, I know it says to use Red Chili Paste, but do you think Red Curry paste would work in the crockpot? My husband and I love thai curry dishes and I have the curry paste on hand. I just don't know how the oil in the paste would handle being in the crockpot.

    Hello! Just discovered your blog and I LOVE IT--almost as much as my crockpot!! I tried this recipe today and unfortunately the coconut milk curdled. Still tasted great, but just looked a bit unappetizing. I used thawed chicken breasts cut into smaller pieces, cooked on low for 4 hours.

    I think there is an advantage to using the larger, frozen chicken thighs as recommended: it keeps the overall temperature of the dish lower, so the milk won't curdle.

  122. A quick question...I made this recipe although substituted red curry paste for the chili paste, used light coconut milk, and used frozen veggies. When it was done, there were white speckles, kind of like the milk had separated. Do you think that's because I used the light milk or maybe too much water came out of the frozen veggies? It was a pepper and onion blend. We loved the taste, but I'd like to know how to make it prettier. :-)

    I don't know! I don't remember it separating for me----with a quick stir was it still lumpy? Usually higher fat stuff separates for me---so I don't know if the light milk would have made a difference this time. Maybe you're right and it was the water from the frozen veggies floating on top of the coconut milk?

    I wish I knew for sure, but I don't. I'm sorry.

    I made this recipe tonight and I give it 3 and a half stars. I love Love LOVE thai curry and am quite a connoisseur :) I eat a lot of take out curry and make it at home quite a bit. This recipe was clearly curry, was quite good, and had really good flavor in the sauce. But it wasn't great.
    I used four bone in, skin on thighs. Next time I will take the skin off before cooking. The bones weren't a problem, but the skin was kinda gross :) I probably used more vegetables than the recipe called for - a whole eggplant, a good sized sweet potato, onions and a smallish carrot. Everything cooked well and the sweet potatoes still had some texture too them. I used Mae Ploy brand yellow curry paste ... it wasn't until later that I realized the recipe called for chili paste. Weird. Curry paste is so yummy :)
    So the thing is this... my crock pot still seems to be cooking too hot. This was good, but it just tasted a little overcooked. Adding lime juice and sambal (indonesian chili paste) really helped. It cooked for 7 hours on low in my Rival 4 quart and I would have preferred it to have cooked an hour less. Unfortunately, with my and my boyfriend's schedule that just isn't possible.
    I did spend my birthday money on a rival smart pot, so maybe that will solve all my problems ;)
    I also got some curdled white stuff using regular coconut milk. It stirred back together pretty well, and once the sauce was mixed with the rice I didn't notice at all.
    Thank you so much for this blog! It's amazing!! I'm so inspired.. I can see a long winter of crockpot meals ahead of me :) Thanks for posting crock pot recipes with REAL food in them!! :)

  125. So, I tried the Indian Curry first, but I only had lite coconut milk. Well, it wasn't as wonderful as I was hoping so I am trying again this week with regular coconut milk, and I plan on adding 2 cans. I want more yummy sauciness.
    I have the Thai Style in my crock now, and it curdled too! If I could add the icon of the sobbing big tears flying face I would! I am so sad. It smells so very good, and I was so looking forward to it. The curdledness just grosses me out. I will try the quick stir thing, and I'll try not to cry while I do it. I am sure it still tastes great.

    I made this tonight with chicken breasts and it was fabuluous. It didn't curdle and my husband proclaimed it a "keeper."

    I used 2T of the red chili/curry paste and would use slightly more the next time. I love flaming hot food.

  133. I tried this recipe last night. Following the original recipe on the Rachael Ray site (did you notice that they credit you with creating both curry recipes??) I used bone-in skinless thighs.
    Cooked on high for 4.5 hours.
    Chicken and veggies were cooked perfectly.
    The sauce however was very bland. I had even upped the chili paste to 2 T. and tasted the sauce before adding the chicken and it seemed ok.
    The final sauce definitely needed more acid and heat. I'll up the chili paste and fresh ginger and maybe the fish sauce too.

    I didn't have problems with curdling. I made sure the sauce was well mixed before I added the chicken and then the veggies on top.

    I think next time I'd add some tapioca to the recipe to thicken the sauce a bit too.

  135. Hi Alyson, I'd definitely increase the sweet potato and the eggplant. I think a can of garbanzo beans might be great, and I love the idea of cashews. You can always plop in some browned tofu, too.

  137. Hi Emily! If you have fresh meat, it will not take quite as long to cook, but not by much----the frozen meat really only buys an extra 30-45 minutes. No need to adjust moisture.

    I tried this. And it was yummy. A little bland and we had to add extra Chilli Sauce (I could not find Chilli paste at the grocery store) But the flavours together were yum. The next day it was even better. My kids and husband killed it.

I have sweet potato puree (from Thanksgiving, frozen). Think that would add something to the sauce or just forgo sweet potatoes all together??? Thanks!

  142. I made this tonight and I'm a little disappointed. Before I set the crockpot to cook I tasted the sauce and it was delicious!! Now that all the chicken has cooked though curry sauce is totally watered down by the chicken "broth" and it is more like a soup. Did I do something wrong? Next time I think I'll cook all the ingredients and add the curry sauce after taking out some of the broth first.
