Slow Cooker Chili and Cheese Afternoon Snack Recipe

Day 16.

It's so nice to come home to a hot snack after school, work, running errands, or soccer games. Put your slow cooker to work for you while you're out and about so you can munch on a delicious snack while you catch up on reading the mail. Or reading blogs.

The Ingredients:

--1 can of your favorite chili
--cheese (white, orange, purple-- it doesn't matter)

The Directions:

--open can
--shred cheese
--put shredded cheese on top
--close cooker (I used the mini one, if you only have a huge one, insert a corningware or other high-heat resistant dish into bottom of stoneware)
--heat on high if only gone for 1-2 hours, heat on low if gone 3-4.

Serve with tortilla chips.

Gee, steph. All you did was open a can and shred cheese. Does that really count as a recipe?

Yes. Yes it does.

spinach and artichoke dip

um, yum! have you ever used a dish inside your crockpot? i've heard of doing so but i'm nervous about trying it...

Hi guys! Kelly, it freaked me out too. I have used corning ware and pyrex--and thought about how I put them in 400degree ovens with no problem, so I gave it a try.
So far so good, but of course only do what you are comfortable with.

A million years ago when I was a high school student in Texas, we made this with Velveeta (not sure of the spelling, it's not an ingredient I use often!)

I adore your blog. My family is moving back to a GF diet after being off of one for almost a year. I have to admit I am going back kicking and screaming and dragging my heels. (my heels have carpet burns). Your blog has been a blessing, just from the aspect of seeing another family survive the GF diet. Not to mention all the recipes. I have been reading with my eight year old son, and he cracks up laughing at your sense of humor. Keep up the good work, and THANK YOU!!!!!!

Oh, and I forgot to say that I am using your recipe for corned beef for tonight's dinner, only I am adding brussel sprouts. I have never had them, but as I was choosing a cabbage to add, the brussel sprouts started shouting at me. I will let you know how they turn out.

Well that recipe would put ol' Rachael Ray and her 30 minutes to shame! I have no problem with quick and easy and out of a can and/or bag. I'll have to keep my eyes open for that purple cheese though:)!

I really, really, really want purple cheese!!! Trader Joe himself looked at me strangely when I went looking for it. Let's invent it! Are crayons toxic? We could melt purple crayons with white cheese and voila! Or what about beets... Oh my, this comment sounds like I've already eaten too much purple cheese. Sorry Steph! I love your blog!

I've never tried this in a crock pot, but I make something very similar in the microwave. Can of chili and block of cream cheese (or neufchatel). Melt together in micro for a few minutes. It's great!

The only purple cheese I've ever had was a firm white cheese that was soaked in red wine.... nice in small doses, but I cannot imagine it going well with chili.

Now, the one with mustard and stout in it.... that was particularly nice with chili!
