Bob's are very finely ground and sifted, stone ground are very coarse and not sifted. That is what is loved and cooked in the deep south and called grits(white or yellow). We do this with grits and then pour the cooked grits into a loaf pan, refrigerate overnight, then slice into slabs in the morning.
