I substituted leeks for onions, chard for kale, curry for cumin. I left out the peppers and tomatoes but put in a can of coconut milk and enough broth to make up the difference. Then I added precooked smoked sausage near the end of the cooking time. <br /><br />The Verdict: It tasted a bit on the bland side. So, I finely mince the kale/spinach into the lentils or whatever stewy dish I make and they have no idea it is there. Sometimes I sneak it into chili and marinara sauces! They eat it and get the nutrition.
