I subbed the soy sauce and brown sugar as you suggested, used Polaner all fruit apricot jam and doubled the recipe for my large family. My chops had bones and were really thin, so I cooked them until they fell apart, chopped them up and removed the bones. Served it over brown rice with broccoli and cauliflower on the side. Put the correct amount of apricot preserves in the bottom and then add the soy sauce up a little past the 3/4 cup mark and then stir in the ginger and mustard and voilĂ !
