If I want apple butter, I leave the blended sauce on low (uncovered) for another 30 min to an hr.<br />I will never buy applesauce again. And I think my brown sugar might have been a little expired. So one of those two things caused it to be pretty bitter. I tried it again today with more apples and good brown sugar, and it is delicious!!! I too had to use lime juice because we can't get lemons here in Brazil. It turned out fine.
