I'm not sure if the same chemical reaction happens with canned pineapple/juice. Our ham turned into a "ham spread"...gross. I think the solution might be to add the pineapple much later in the cooking process. Also, I'd like to add---La Choy Soy Sauce----No. Chinese soy sauce has a very distinctive flavor, think, Chow Mein. For salmon----Kikkoman, or even, Yamasa.
