Eating slow-cooked fare doesn't mean that you need to eat gloppy cream-of-something-or-other concoctions. There are TONS of ways to eat lightly, and all of the good-for-you stuff from your veggies and beans stay right in the pot. In fact, there's even a CrockPot Diet!
